The Spice Route Afternoon Tea

Inspired by Indonesia's role along the ancient spice routes, this afternoon tea presents classic Western canapés with indigenous Indonesian spices and herbs. Served on a tiered stand inspired by the form of a ‘Candi’, Indonesia's ancient temple architecture, the presentation traces the layered journey of spices once traded across the archipelago and beyond.

Each creation stays rooted in European technique, lifted by a single Indonesian herb or spice from a distinct island. Subtle rather than bold, it celebrates Indonesia's diversity - one flavour, one place at a time.
